Here at Foodblasts, we grew up with this homemade cheesy caprese goodness and decided to add another All-American favorite ingredient; chicken! This is a great entree or side dish, depending on your needs. We brought it to a family dinner one night, and a week later had it ready to go to take for work and school lunches. Versatile and did we mention the cheese?
1 cup mozzarella cheese
1/2 cup Havarti cheese, chunks
1/2 cup gouda cheese, chunks (or other creamy cheese of choice)
1/2 cup fresh basil leaves
1 frozen pie shell
1 cup sliced tomatoes
1 large chicken breast (approximately 6-8oz)
Bake pie shell 350F for 5 minutes. Take out then layer the following ingredients in pie shell; cheese, basil, tomato, chicken. Drizzle a light coat of olive oil over entire pie. Be sure a nice layer of cheese is on top, then place a few tomato slices to form a nice decor. Allow to set up slightly before cutting. Then.. enjoy!
