Egg Brunch Delight

There is nothing that beats a nice, nutritious breakfast.   Except for when it’s also convenient enough to take on the go!   These little egg bites are perfect for such an occasion – and you can add whatever ingredients you like to them to suit your taste.   Great for meat eaters and vegetarians alike, give these a try when you’re looking to change things up in the morning.

Ingredients:

12 eggs
6 phyllo dough sheets
6oz Canadian bacon
1 cup shredded mixed cheese
12 Cherry tomatoes
1/4 cup melted butter

Hollandaise Sauce
4 egg yolks
2 tbsp lemon juice
2 tsp Cayenne pepper
dash of sea salt
1/2 cup melted butter

Preheat oven to 350°. Grease muffin pan. Take several sheets of phyllo pastry and brush each layer with melted butter. Take a cookie cutter or glass and cut out 12 circles to place them in muffin pan. Dice Canadian bacon and place in each pastry. Slice cherry tomatoes in half and place a couple pieces in each pastry. Do same with shredded cheese. Crack an egg in each pastry. Cook in oven for 15-20 minutes, until pastry is somewhat golden and egg is to your preference.

In sauce pan add yolks and lemon juice and whisk until mixture is doubled. Put on very low heat (be careful not to turn eggs into a scramble). Slowly add melted butter while continuing to whisk vigorously. Once mixture has doubled, remove from heat. Sprinkle with cayenne pepper and sea salt for taste.

Pour sauce over individual egg pastries. Enjoy warm!
