Macaroni Arancini Balls

It’s fun to have just the right snack to make for family game night, movie night, or when hosting a sleepover or even birthday party for kids.   These Macaroni Arancini Balls are just that snack.  Don’t know what Arancini is?  Think Fried Mac N Cheese lightly breaded with Doritos and Cornflakes and dunked in a dipping sauce!   Your kids will start requesting them 24/7, so good thing they are super easy and fast to whip up!

1 small bag of Macaroni pasta
1/4 cup milk
2 tbs Ranch
1 egg, beaten
1/2 cup Parmesan cheese
1 cup seasoned bread crumbs
2 tbs crushed Doritos
2 tbs crushed cornflakes
Vegetable oil for frying
Cubed cheese such as mozzarella or Monterey Jack

Combine bread crumbs, crushed Doritos and corn flakes and set aside.

Prep for the macaroni-
Boil 6 cups of water in a sauce pan and add uncooked macaroni shells or spirals. Turn down heat to medium and cook pasta until tender (about 5 minutes). Drain water from pot. Add butter, milk, cheese, egg and ranch to macaroni and stir.

Once macaroni and cheese sauce is cooked and slightly cooled, add Parmesan cheese so you are able to roll mixture into a ball. Place one of the two fillings inside the ball and then roll ball in the bread crumb mixture. Continue this procedure until all of the macaroni mixture is used.

Heat vegetable oil in a saucepan on medium high. You know the oil is hot enough when piece of batter bubbles and floats to top. Place each ball in hot oil. Remove when they are golden brown. Drain on paper towel.

Use marinara as dipping sauce and enjoy!
