We made up a street corn recipe for your SKILLET because we had no grill – and thought you might not at home either! You’ll have to check this out but we had more than enough Skillet Chipotle Street Corn so we made it into a meal with chicken and a wrap. Skillet Chipotle Street Corn (our original recipe)
2 Chicken breasts salt to taste (a dash is enough)
1 tsp Chipotle seasoning
1 tbsp garlic, minced
2 tbsp pico de gallo
1 tsp chives
1/2 c cheese
1 dallop sour cream (to preference)
1 tbsp cilantro
tortillas (whole wheat for a healthier choice)
In medium saucepan, pour 2 tbsp olive oil or use cooking spray and heat to medium. Add chicken and sauté. Add salt, chipotle seasoning, and garlic. Remove from heat. On cutting board, cut corn from the cob and set aside. You are ready to build! Place tortilla followed by all toppings in your desired order. Enjoy!
