Tres Leches Churro Cheesecake

This innovative burst of flavors was created because we couldn’t decide on just ONE dessert at our local Mexican food joint… so we decided to put them all together in one!  Creamy cinnamon sugar tastes can be enjoyed as a breakfast, snack or dessert.  It’s made specifically for you who has a sweet tooth that runs deep in your soul.  Tres Leches Churro Cheesecakes are easy to prepare and the whole family – or ANYONE who has a little taste won’t be able to resist begging for more!

Ingredients:

6 sheets phyllo dough
2/3 cup butter, melted
1 tbsp cinnamon
4 tbsp sugar
1 can sweetened condensed milk
1 can evaporated milk
1 small 5″ plain or new york style cheesecake
1/4 cup heavy whipping cream
1/2 cup crushed Cinnamon Toast Crunch or similar cereal

In a small bowl, melt butter and add cinnamon and sugar. Make sure to work quickly with the phyllo dough as it tends to dry up quickly!  Unwrap and unroll phyllo dough, placing your first sheet on a smooth, clean surface.  Brush cinnamon sugar butter over entire surface of phyllo.  Place another sheet of phyllo directly on top. Repeat until you have 5 sheets thick. Cut cheesecake into small 1″ rectangles to fit phyllo layers. Place cheesecake in the center. In another small bowl mix sweetened condensed milk, evaporated milk and cream together well. Pour a small amount on top of cheesecake. Brush butter around sides of phyllo then folds over to create a pocket. Place pockets in pan and top with crushed up cinnamon toast crunch. Bake for 25 minutes at 400F or until pastry has puffed and is golden brown. Top with whipped cream. Enjoy!
