Pineapple Vegan Fried Rice

Pineapple Vegan Fried Rice is sure to be a show stopper for the vegans in your life!  Not only is it keeping in line with choice to be vegan, it looks pretty too!  You’ll love the uplifting smells of lemongrass and ginger wafting through your kitchen as you cook this up.  Let us know how you like it in the comments!

Ingredients:

For the rice:
2 tablespoon olive oil
1 package tempeh, cut into ½ inch cubes
2 clove garlic, crushed
1 teaspoon ginger, chopped
2 teaspoons lemongrass, chopped
1 onion, chopped
1 celery, chopped
1 red pepper, chopped
1 carrot, grated
1 small bok choy, chopped
2 cup broccoli florets
1 cup frozen peas
2 ½ cups cooked brown rice (about 1 cup dry)
½ cup raw cashews
1 pineapple, cut in ½ lengthwise, flesh removed and cut into small ½ inch cube, ( use 1 cup of the cubed flesh)
¼ cup cilantro, chopped

For the sauce:
¼ cup fresh lime juice
¼ cup soy sauce
1 teaspoon coconut sugar

Directions:

Heat the oil in wok, stir fry the tempeh cubes until golden brown, set aside. Using the same pan, heat up more oil, stir fry the onion, garlic, ginger, and lemongrass until it is translucent, add the vegetables, stir fry until the vegetables are tender. Mix the sauce ingredients. Add the rice, the sauce, the pineapple, the cooked tempeh, and the cashews. Stir fry until heated through. When the sauce is absorbed, sprinkle with cilantro, serve, and enjoy!
