Apricot Granola

Even if you’re a person who is on the go in the morning, it is important to fuel your body with proper nutrition.   To make sure you are firing on all cylinders throughout the day, begin your day with this delicious and nutritious meal that you can take with you easily if that is what your schedule requires.   Give this apricot granola a try with the milk of your choice!


1/2 cup sliced almonds
1/4 cup chopped raw cashew nuts
2 cup gluten free old fashion rolled oats
1 cup rice cereal
1/3 cup maple syrup
1 tsp vanilla extract
1/4 tsp cinnamon
2 tablespoons unsweetened coconut flakes
1/2 cup chopped dried apricots


Toss together all ingredients in a bowl except the coconut flakes and the dried apricots. Spread on a prepared baking sheet lined with parchment paper and bake at 350ºF for about 30 minutes or until golden brown, stirring occasionally to brown evenly. When out of the oven, break out the bigger pieces (if any) while warm, let cool, add the dried apricots and coconut flakes. Serve with your favorite fruit topping and milk (non-dairy for vegan version) and enjoy!
