Chicken Fajita Puffs

We all know a menu favorite is Chicken Fajitas… but WHAT IF we add it to a puff pastry?  And our own signature Sriracha Aioli?  You will love this twist on fajitas… you could add beef or carnitas to fit your flavor preferences as well.  You’ll see what we mean about it being a fiesta in your mouth!


1 cup chicken breast, cooked and in strips
1/2 cup yellow bell pepper
1/2 cup green bell pepper
1/2 cup red bell pepper
1/2 cup sliced onion
1 packet fajita seasoning

5-7 phyllo dough sheets
1 cup butter, melted
1 cup Sriracha Aioli
2 cup mozzarella cheese
sour cream or greek yogurt
2 TBSP cilantro, fresh
2 TBSP green onions, diced
2 TBSP tomatoes, diced

Simmer chicken, vegetables, seasoning and water over medium heat. Set aside.
Lay one phyllo sheet down on cookie sheet or cutting board and with pastry brush, brush entire sheet with melted butter. Lay another phyllo dough sheet onto buttered one. Spread sriracha aioli over surface of sheet. Lay another phyllo dough sheet. Repeat pattern until sheets are gone and top sheet has no liquid spread upon it. Using pizza cutter, cut sheet into 4 pieces. Place 1/4 cup mozzarella in center of each square. spoon 1/4 cup chicken fajita mixture onto mozzarella followed by another 1/4 cup mozzarella. Brush edges with butter or egg and fold corners on top of each other, then turn entire pillow over to secure. Brush with butter. Bake for 30 min at 350°F. Top with sour cream, tomato, crushed Doritos and chopped green onions. Enjoy!
