Sambal Chicken Bowl


4 cups water
2 cups Jasmine rice
3 large peppers
2 cups butternut squash
1/2 red onion
2 heads broccoli
4 tbsp olive oil
4 tbsp soy sauce
1 tbsp sambal
1 tbsp honey
1 lb diced chicken


Preheat oven to 400°. In a large pot, boil water and pour in Jasmine rice. In a large bowl, mix together peppers, butternut squash, onion, broccoli, and olive oil. Pour mixture onto a baking pan and bake in oven for 30 minutes (or until cooked and crispy.

In a small bowl, combine soy sauce, sambal and honey. Pour mixture over chicken and place in frying pan. Cook until chicken isn’t pinky or transparent. Add all ingredients into a bowl and enjoy! Top off the bowl with more sambal for an added kick.
