Seared Ahi Tuna Spicy Tacos

Have you been to a trendy restaurant and tried some new fancy fish tacos?  Our food bill eating out was getting a little spendy on all our favorite eats so we came up with this easy to make at-home Seared Ahi Tuna Spicy Tacos with a homemade Sriracha Vinaigrette that you will just die for!  Perfect for summer with it light and fresh.

Ingredients:
salt to taste
Ahi Pepper Dredge:
2 tbsp pepper
1 tbsp garlic, minced
2 tbsp ginger

2 3-4 oz Ahi steaks
1 avocado, sliced
1 large mango, diced
1 small onion
1 bunch cilantro, fresh
6 corn tortillas or large leafs of lettuce for lettuce wrap
1 corn corn lime, sliced
1 bag cabbage, shredded

Sriracha Vinaigrette:
1/2 cup olive oil
1/2 cup rice vinegar
5 tbsp Sriracha
3/4 cup pomegranate seeds
1 tbsp sugar

Directions:
Slice fresh Ahi tuna. Dredge in seasonings. In small saucepan, spray cooking spray. Place Ahi in pan. Sear ahi just for a minute or two on each side, to retain rare pink middle. Remove from heat and set aside. In small bowl, mix all vinaigrette ingredients well and set aside. On cutting board, chop all taco veggies. Build taco by adding all ingredients in the order of choice on tortilla. Drizzle vinaigrette over top of entire taco. Enjoy!
