Skillet Chipotle Street Corn

Have you ever walked along a city street and see or smelled freshly grilled corn at a food truck vendor?  Or gone with friends and family to a fun summer BBQ where all the ingredients are present for a delicious meal?  Here we found this easy way to create a grilled street corn at your home, just using a skillet.  No need for an outdoor grill and yet STILL getting that delicious smoky flavor.  Check out how we retained moisture and flavor using one of our favorite spices, chipotle seasoning, below!

Ingredients:
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup finely crumbled cotija, plus more for garnish
1/2 teaspoon chipotle seasoning plus more for garnish
1 tbsp clove garlic, finely minced
1/4 cup finely chopped cilantro
4 ears shucked corn
1 lime, cut into wedges

Directions:
Heat large saucepan on high heat. While heating, combine mayonnaise, sour cream, cheeses, chipotle seasoning, garlic, and cilantro in a large bowl. Stir until well blended. Transfer corn to bowl and use a large spoon to evenly coat corn on all sides with mixture. Place corn in saucepan and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 15 minutes. Cheese will melt and burn in bottom of pan, so keep air flow high with a vent going on high, a fan, and or a window open. The charred cheese will add to a grilled vegetable taste. Sprinkle with extra cheese and chipotle seasoning and serve immediately with lime wedges. Enjoy!
