Zucchini Waffle Bread

My grandma and mom used to make Zucchini Bread all the time and around Mother’s Day we created this waffle recipe in their honor.  Keeping the toppings simple with butter and maple syrup, it’s one of those breakfasts that you’ll want to make every Sunday morning!

2 cup shredded zucchini
1/8 cup chocolate chips
1/8 cup chopped pecans
3/4 cup waffle mix
1 egg
4 tbsp coconut oil
1 tbsp cinnamon
1/4 cup sugar
1/3 cup water

Heat waffle iron. In medium bowl, mix all ingredients well. Drop batter into waffle iron by 1/2 c increments to fill waffle iron bottom. Close lid, watching closely after approximately 6 minutes. Remove carefully from iron and top with any desired toppings. We stuck with butter and syrup! Enjoy!
