Berry Quinoa

Not everyone enjoys beginning the day with a super heavy breakfast, so this dish lightens things up a bit!  Full of quinoa (the “superfood”), as well as healthy fats from almonds and protein from greek yogurt:   this is the perfectly nutritious way to start your day!

Ingredients:

3 cups cooked red quinoa
1 cup blueberries
freshly squeezed orange juice
1 cup plain Greek yogurt
1/2 cup chopped almonds

Directions:
Boil the red quinoa as directed on packaging. Once cooked, let cool. In a large bowl, combine all ingredients. Refrigerate for 1 hour. Serve with mint and enjoy!
