Chicken Caprese Pizza

Instead of using pizza crust or bread – we thought – why not flatten a chicken breast and have THAT as the crust?  Whatever your dietary needs, this clean entree is a healthy and tasty option sure to appease the pizza cravings with caprese finesse!

1 chicken breast, thinly sliced
Olive oil cooking spray
2 slices cheese (of choice)
2 tbsp corn
fresh rosemary
3 tbsp artichoke hearts
3 tbsp stewed tomatoes
4 roasted garlic, (whole cloves)

On a clean, smooth surface such as a cutting board, flatten the thinly sliced chicken breast with a meat tenderizer. Add salt and pepper to a plate as well as bread crumbs. Coat both sides of chicken with mixture. In saucepan over medium heat, spray olive oil cooking spray to coat. Add the chicken and brown first side for approximately 3 minutes, just until barely golden. Once you flip the chicken, be ready to work quickly. Flip chicken, then add cheese slices, artichoke hearts, garlic cloves, stewed tomatoes, and corn. Add fresh rosemary and garnish with a bundle of rosemary leaves (a bunch). Serve immediately and enjoy!
