Mango Chicken Croissant

Lunch hour should be something to look forward to daily! If you are craving a sandwich, but want to break out of the boring lunch meat realm, why not try this tasty combo of flavors?  The best part is layering the textures into a warm, buttery croissant.


1/4 cup butter
1 tsp salt
2 Croissants
1 ripe mango, sliced
1 avocado
1/2 cucumber (in peels)
1 cup shredded cooked chicken breast
4 oz cream cheese
1/2 cup sour cream
1/4 cup green onions
chives for garnish

Heat butter, garlic, and salt in saucepan. Cut both croissants in half and cook in butter. Set aside. Mix cream cheese, sour cream, lime juice and green onions together. On bottom half of croissant, spread cream mixture. Place folded cucumber peels along croissant. Add cooked chicken, then mango slices, then avocado. Spread the rest of cream mixture along top half of croissant, and place on top. Enjoy!
