Sriracha Aioli Potatoes

Everyone loves a good potato-based side dish, but if you’re burnt out on potato salad or mashed potatoes, have we got a great alternative for you!  Why not take an ordinary baked potato and add some cheesiness and then kick it up a notch in the spice department?   We guarantee you’ll love these so much, you’ll want to serve them up at every summer BBQ.

Ingredients:

2 medium white potatoes
4 TBSP butter, melted
1 cup parmesan cheese, grated
1/2 tsp black pepper
1 tbsp garlic powder
1 tbsp paprika
1 tsp salt
parsley, chopped (for garnish)
1/4 cup green onions
1 c shredded mozzarella

sriracha aioli:
2 c mayonnaise
1/4 cup sriracha
2 tbsp pepper flakes
1/8 cup lime juice
1 tbsp salt
1/2 tbsp cayenne
1 tsp cumin
Mix together well, set aside.

PREP:
Preheat oven to 325F/160C. Insert a skewer into the potato and gently push skewer all the way through it. Hold a sharp, thin knife at an angle and cut in the opposite direction you are turning the skewered potato. Gently fan out the potato down the length of the skewer, until you have an even gap between the slices forming the spiral. Melt the butter and brush it all over the potato. In a medium bowl, combine parmesan cheese, black pepper, garlic powder, paprika and salt.  Place the skewered potato over the bowl and shovel the mixture all over the potato until entirely coated.  Disperse mozzarella over surfaces of both potatoes. Rest potatoes on baking sheet so that it is hovering over the bottom of the sheet. Bake for 25-30 min or until nicely browned.  Pour Sriracha aioli all over potatoes, or use on side to dip.  Garnish with additional parmesan, green onions and parsley.
