6 pieces hawaiian, brioche or butterbread
1 package mini Canadian Bacon pieces
6 thickly sliced Cheese (we used Tillamook cheddar cheese)
1 tbsp cinnamon
1/8 cup stevia
1/2 cup half and half
coconut oil cooking spray
In a square or rectangular medium container, mix eggs, cinnamon, stevia, and a half and half well. With all 6 pieces of bread, dip in egg mixture and set aside. Then in a saucepan, cook bread lightly so that outside is cooked barely. Lightly spray muffin tin with cooking spray. Place 1 piece of french toast into each cup. Place 1 slice cheese on top of toast in each cup. Place Canadian bacon on top of the cheese. Place more cheese if desired. Finish each cup off with equal amounts of the leftover egg mixture. Bake at 350ºF for approximately 15 minutes. Allow to cool slightly, then serve. Enjoy!
