No one ever goes wrong with PIZZA! We made french toast – but savory style! We mashed the ideas of an egg breakfast muffin with a pizza that is great ON THE GO, as a snack or as a meal. Crazy easy but you won’t want to stop eating these – – UNTIL THEY ARE GONE!
Ingredients:
1/2 c cream
5 eggs
6 slices butterbread
1 cup chicken breast, cooked and diced
6 Cheddar cheese slices (or any other type)
1/2 cup red pepper, diced
1/4 cup garlic, minced
1/4 cup onion, diced
1/2 cup mozzarella, shredded
1/2 cup sundried tomatoes
Salt and pepper to taste
Rosemary, fresh for garnish
Directions:
In medium saucepan, cook chicken breast in olive oil spray over medium heat. Set aside. In shallow, square or rectangular dish, mix eggs, cream, salt, pepper and rosemary well. Dip pieces of bread in mixture and coat well. In medium saucepan, cook all 6 pieces lightly on each side. In greased muffin tin, and in each muffin cup, place bread, cheese, red pepper, garlic, onion, sundried tomatoes, chicken, more cheese and garnished with fresh rosemary. Bake at 375ºF for 10-12 minutes. Remove from oven and ready to serve immediately! Enjoy!
