Stuffed Peppers

We grew up with stuffed peppers ourselves – did you?  Here’s an easy comfort food that will leave you satisfied and ready to take on your day or night with pizzazz because NOTHING will hold you down after that delicious meat!


4 whole red, orange, yellow or green peppers
1/4 c grated cheese
1/4 c bread crumbs
1 lb ground turkey
2 TBSP olive oil
1/2 cup diced onions
1 8 0z can of crushed tomatoes
1/2 can of tomato paste
2 TBSP crushed garlic
1/2 TBSP parsley
1/2 TBSP red pepper flakes
1/2 TBSP paprika

Heat olive oil in skillet. Add ground turkey until brown. Add onions and garlic until soft. Stir in crushed tomatoes, paste, chili peppers, paprika and add salt and pepper to taste.

Place peppers in greased casserole pan. Add meat mixture to insides of peppers. Bake at 375 for 15 minutes. Remove from oven. Sprinkle with bread crumbs and grated cheese and bake for an additional 10 minutes. Enjoy!
