Portobello Quesadilla


tortilla wraps
2 portobello mushrooms
1/2 white onion
1 red pepper
buffalo mozzarella cheese
cherry tomatoes
olive oil

Sautée 1/2 white onion, 2 chopped portobello mushrooms and 1 red pepper in olive oil until soft. Remove from pan. Add tortilla wrap to pan and place 8 slices buffalo mozzarella cheese then veggie mixture. Top with shredded mozzarella and cover with second tortilla wrap. Once bottom has browned, flip over and cook other side until brown. Remove from pan onto a plate, divide into pieces, and serve with sour cream and salsa. Enjoy!
