30-Minute Manicotti

Fast and easy cheesy tomato pasta?  Look no further than THIS yummy recipe!  Comfort food at its all time greatest – this is sure to be a solo, duo or crowd favorite for lunch or dinner!  We even took  a dish to a work barbeque and it was a home run.

Ingredients:
1 package giant pasta shells
1/2 cup ricotta cheese
1 cup grated parmesan cheese
8 oz cream cheese
4 egg whites
2 full eggs
1/2 cup red pepper
1 tbsp green onions
2 tbsp parsley, as garnish
salt/pepper to taste
1 cup marinara sauce
3/4 cup mozzarella

Directions:
Cook shells by boiling over medium high heat in water on stovetop. In a medium bowl, mix ricotta, parmesan, cream cheese, eggs, green onions, parsley, salt and pepper to taste, mixing well until smooth. In 8×8 pan, grease to prepare with cooking spray. Fill cooked shells, one by one, with cheese mixture, filling pan well with cheese side up. Sprinkle red peppers all over top, followed by marinara sauce then mozzarella cheese. Bake at 400ºF for 30 minutes, or until golden brown on top. Remove and let cool slightly before serving. Enjoy the cheesiness!
