1/2 cup red pepper
1 tbsp green onions
2 tbsp parsley, as garnish
salt/pepper to taste

In a medium bowl, mix ricotta, parmesan, cream cheese, eggs, green onions, parsley, salt and pepper to taste, mixing well until smooth. In 8×8 pan, grease to prepare with cooking spray. Fill cooked shells, one by one, with cheese mixture, filling pan well with cheese side up. Sprinkle red peppers all over top, followed by marinara sauce then mozzarella cheese. Bake at 400ºF for 30 minutes, or until golden brown on top. Remove and let cool slightly before serving. Enjoy the cheesiness!
