Wait? Pulled pork sloppy joe WITH NO PORK?! We wanted to share this recipe that uses jackfruit as the main ingredient. You can still have an american favorite without compromising your no-meat goals! Let us know how you liked it in the comments!
40 oz jackfruit (NOT canned in syrup or brine)
2 tbsp brown sugar
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1 tsp chili powder
1 1/2 cup of your favorite bbq sauce (vegan sauce for fully vegetarian meal)
In a large bowl, combine all ingredients except bbq sauce, buns, and avocado. Once mixed, place jackfruit mixture into sauce pan and mix in 1 cup of bbq sauce. Sauté on medium heat for 25 minutes, stirring constantly and breaking up the jackfruit. Once tender, remove from heat. Assemble your sandwich, topping with extra bbq sauce. Enjoy!
