Sriracha Aioli Egg Sandwich

We were thinking of how we could take an egg breakfast sandwich to a new level… and Sriracha Aioli Egg Sandwich was born!  We created our own spicy sauce that is just the right amount of kickin flavor in order to have a party for your tastebuds and can’t wait for you to try it!  Don’t forget to have the egg over easy so that the yolk runs through the sandwich.  Bon Appetit!

Ingredients:

Sandwich:

1/8 c vegetable oil
1/2 c sliced onions
2 TBSP sugar or sugar substitute (we used stevia)
1/2 c shredded potatoes
salt & pepper to taste
3/4 c butter
2 Hawaiian sweet buns or egg hamburger buns
2 slices bacon (cut in half)
2 eggs
tomato slices
2 slices cheese (Havarti, Muenster, Cheddar etc)

Sriracha Aioli:
1 c mayonnaise
3 TBSP fresh basil and oregano (can substitute 1 TBSP Italian seasoning)
3 TBSP Sriracha
3 TBSP green onions
3 TBSP minced garlic

Directions:

Pour oil into medium saucepan, followed by sliced onions. Sprinkle sugar over onions until cooked and golden.  Set aside.  Form potatoes into patty, dusting with salt and pepper.  Cook on both sides til golden brown, set aside. Cook bacon, set aside.  In same saucepan, melt butter. Toast buns over medium heat, removing when just slightly golden. Build sandwich in following order:
Bun, hash brown patty, tomato slices, bacon, over easy egg, caramelized onions, slice of cheese, Sriracha Aioli, and finally, the bun top.
